.Cranberry Almond Spinach Salad w/ Chicken.

Last night Husband and I discovered that we hadn't touched out HUGE Costco-sized container of Spinach. And it was due to go bad relatively quickly. So like the good wife I am {and because I finally sat down last night and did a 'meal plan'...but more to come on that later}, I whipped us up this for dinner. It was tasty, healthy and filled us right up. I have a thing about salads not filling me up, but this one certainly did! We Loved it!
Cranberry Almond Spinach Salad 
with Spicy Chicken
{But you can do your Chicken up any old way......although spicy had a very nice contrast to the sweet}
Ingredients:
1 tbsp Butter
3/4 cup almonds, slivered
A Bunch of Spinach leaves, torn into bite sized pieces
1 cup dried cranberries
2 tbsp toasted sesame seeds
1 tbsp poppy seeds
1/2 cup white sugar {you might want to use a little less, but that's up too you}
2 tbsp minced red onion
1/4 tsp paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil
2 - 4 Chicken Breasts {depending on how many you are feeding}
Note: If you want spicy chicken like we threw together in the picture, then here's our approximate marinade:
1/4 cup Sriracha Sauce, aka. Rooster Sauce {which is very spicy, and can be found in the Asian section of the supermarkets}
3 tbsp honey
2 tbsp garlic powder
Directions:
1. In a medium saucepan, melt the butter over medium heat. Cook and stir almonds in butter until lightly toasted. Remove from heat and let cool.
2. In a large bowl, combine the spinach with the toasted almonds and cranberries.
3. Cook your chicken according to how you want it. We did ours spicy, and I just threw the Sriracha sauce, honey, and garlic powder together in a bowl. Mixed it well, and then coated the chicken for a couple minutes in it. Then we put them on the BBQ till they where cooked. About 5 minutes each side. Cut them up into slices and let cool slightly.
4. In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, white wine vinegar, cider vinegar and vegetable oil. Toss with the spinach just before serving and add chicken to the top.
Viola! A healthy and tasty salad for dinner.
